The header is the small line of text at the top of each page, usually your name, the book title, or the chapter title. The footer is at the bottom and usually holds the page number. These only appear in the print book; ebooks don't use them.

Chapters only lists each chapter title. Chapters and subtitles also lists each chapter's subtitle, if your chapters have one.
A drop cap is a large first letter at the start of each chapter that drops down into the first few lines of text, a classic touch in traditionally published books. Each interior style has its own default; if you're not sure, keep the default.
